For the cookies:- 3/4 cup (170g or 1 1/2 sticks) unsalted butter, room temperature
- 1/4 cup (60g) cream cheese, room temperature
- Zest of 1 medium lemon
- 2 teaspoons lemon extract
- 1/2 teaspoon vanilla extract
- 1 cup (200g) granulated white sugar
- 1/4 cup (55g) packed light brown sugar
- 1/4 teaspoon kosher salt
- 1 large egg
- 1/4 cup lemon juice, from 1 medium lemon
- 2 1/2 cups (350g) all-purpose flour
- 1/8 teaspoon baking soda
- 1/2 cup (100 g) granulated white sugar
